This soup is great for the cold winter months, especially if your immune system needs a boost. It’s dairy-free as it helps to avoid these if you are suffering from a cold or the flu. It is also just a delicious, warming and satisfying soup!                                                                                                                                                                                                                                          Serves 4 people.

Ingredients:

32oz organic chicken stock (one carton)

12oz fresh organic shiitake

1/2oz dried porcini

1 tablespoon minced peeled fresh ginger

3 cloves of garlic

1 shallot

A handful of fresh or dried thyme

A teaspoon ground turmeric

Olive oil

Salt (Kosher, pink himalayan or sea salt)

Preparation: Stem and slice the shiitake. Peel and mince the ginger. Peel and chop the garlic and onion. Rinse the porcini in cold water and slice into small pieces.

Cooking:

  • Heat up a cast-iron pan and add approximately 2 tablespoons of olive oil and the shiitake. Shiitakes do not contain a lot of water so stir them around and add more oil if they are sticking to the pan. Let them saute for 7-10 minutes, until golden brown.

  • Add the onion and saute until they are see-through.

  • Add the porcini, ginger, garlic, thyme, turmeric and a pinch of salt.

  • Stir it together and immediately add the chicken stock.

  • Let it simmer for 20-30 minutes, taste the soup and add seasoning if needed.

  • Serve and enjoy!

Tip! For an extra immune and flavor boost, dissolve 1 teaspoon of cayenne pepper in the juice of half a lemon, put a couple of drops in the soup as you serve it!
